Apparently Epubor does this but internalizes this information and removes the DRM and turns it into a text file, which removes all formatting and pictures. I want to convert Kindle to Epub, not to text.

Are you using the trial version of Epubor Ultimate? Please note the trial version only convert 20% content of each book and in text format. But the licensed version will give you the full content in its original formatting and enables you to convert kindle books to epub.
