If you download Nook books via Windows Store Nook app, you can find it here: C:\Users\"username"\App Data\Local\Packages\BarnesNoble.Nook_ahnzqzva31enc \LocalState
If you are using epubor software, in the left column, right click the book title, and choose "Open", you will open the folder stored your downloaded nook books.

Your app has always worked, but just to be safe, it would be good to know where the actual files are stored.
